Cocido madrileño

INCLUDES SOUP, CHICKPEAS AND A SELECTION OF MEATS AND VEGETABLES WITH FRIED MILK FOR DESSERT

The cold weather arrives and, with it, the Cocido Madrileño is a must every Friday at El Café de la Ópera. A traditional menu with which you can enjoy a delicious stew in three servings, to eat as you like, awarded in 2015 for the quality of its chickpeas.

A gastronomic proposal that starts with the stew croquette, chili peppers with spring onions and soup with noodles. On a tray, Castilian chickpeas and vegetables are served. Accompanied by a careful selection of meats: blood sausage, bacon, bacon, bacon, ribs, Asturian sausage, black pudding and chicken with tomato sauce with cumin. And for dessert, fried milk.

Its secret? “Slow cooking for more than 48 hours,” says the chef. Available every Friday and, upon request, any day of the week, 24 hours in advance. It is served from pot to plate, always with ingredients of the highest quality.
